🥗 Cucumber Parsley Salad Recipe

Ingredients:

  • 2 cucumbers, thinly sliced

  • 1 cup cherry tomatoes, halved

  • 1/2 cup thinly sliced red onion

  • 1/2 cup crumbled feta cheese

  • A handful of fresh parsley leaves (or 1 tsp of Farmer Soul dried parsley)

  • 2 tbsp extra virgin olive oil

  • Juice of 1 lemon

  • Salt & pepper to taste

Instructions:

  3. Drizzle with olive oil and fresh lemon juice.
